To celebrate International Women’s Day this year, we are shining a spotlight on some of the incredibly talented and hardworking women who make up our Hawksworth Restaurant Group family. Comprising almost half of our team, women play an important role in our operations; we take this day to recognize and praise their achievements.
A recent member to join our Bel Café team is Pastry Chef, Tessa Faulkner. Growing up in San Francisco, California, Tessa hails from a creative background, originally studying industrial design and working in the movie business. Discovering cooking as another outlet to channel her creative energy, Tessa’s hard work and dedication turned her culinary passion into an acclaimed career. She worked her way up through various professional kitchens, soaking in every ounce of knowledge along the way, leading to positions at top establishments such as Shakewell in Oakland, California, and Ottolenghi in London, England.
Tessa has worked specifically in pastry for the last nine years, joining the Bel Café team as Pastry Chef in November 2019. Tessa enjoys working in a cafe environment because of the family style relationship the team develops working so closely together. She also loves being able to produce high quality food at accessible price points that many people can enjoy, still finding intense joy and fulfillment when people sample her creations. Working at Bel Café, Tessa is excited to be part of a team where the focus is on fresh quality ingredients and it is encouraged to explore and experiment with flavour combinations. Tessa’s blonde chocolate, miso & almond kouign-amann has been a huge hit, expertly combining savoury and sweet flavours into an incredibly delicious treat. Looking forward to spring, Tessa is eager to get her hands on seasonal fruits such as rhubarb and peaches to incorporate into new pastry creations for upcoming menus.
During her downtime, Tessa takes advantage of the beautiful landscapes surrounding Vancouver. Once an avid roller derby competitor, Tessa’s skills quickly transferred to skis and she hits the slopes at Grouse Mountain or Whistler Blackcomb whenever she gets the chance. A true West Coast girl at heart, Tessa is excited for the days to become warmer and to spend time at the beach enjoying the sun and saltwater.
